Are you ready to have your face melted off by a mind-blowing mocha? Then let’s turn it up to level three! For this ultimate mocha experience, we’re going to use high-quality coverture chocolate.
Start by combining 100 grams of your preferred chocolate (we recommend a 55% dark chocolate) with 100 grams of cream. Microwave the mixture for about 30 seconds until it’s warm, then mix until smooth. If you’re in a hurry, you can use a blender to speed things up. Store the ganache in the fridge until you’re ready to make your mocha.
When the time comes, pull a double shot of espresso and add an equal quantity of the ganache (around 40 grams). Stir until well combined. Steam your milk, pour it over the chocolate-coffee base, and top it off with some shaved chocolate or more ganache. This is the epitome of chocolaty goodness!
Bonus Recipe: The Ultimate Mocha Frappe
Now, if you’re feeling adventurous and want to try something unique, we’ve got the ultimate mocha frappe recipe for you. Start with the same ganache base from our level three mocha. Add 100 grams of the ganache, 200 grams of ice, 100 grams of milk, a double shot of espresso, and a quarter teaspoon of xanthan gum (available in the health food section of your supermarket).
Blend all the ingredients together until the ice is smooth and the consistency is just right. Pour it into a chilled glass and get ready to party like it’s 1999. This mocha frappe will transport you back to the good old days!
